Christmas Greetings and Salutations

I’m crossing my fingers that things are back to normal with my blog. It had a bit of a spazz-out and I had to restore some stuff from a backup, but it’s all good now.

[[image:xmas-shirt.jpg:Christmas Shirt:right:0]]On Christmas Eve the last few years I’ve taken to having Chinese food for dinner. This tradition has actually become pretty popular from what I hear from a lot of people. It’s not necessarily a tradition I really understand since Christmas and Chinese food don’t seem really inextricably linked, but I like it all the same. This year I decided to take it one step further and actually try and make mine and Corina’s favourite Chinese dishes instead of ordering take-out. I figure since we now own a deep fryer that we got as a wedding present I would give it a go. I’m going to make Soo Guy Almond, which is a a battered chicken with a gravy style sauce and slivered almonds on top. From what I understand with this dish it may actually be a regional bastardization of Chinese food. I tried looking up recipes for Soo Guy only to find some other preparation involving putting plum sauce on the chicken afterwards, which is definitely not how I’ve had it in numerous restaurants. Then I’m going to make some Chicken Balls as well. I opted for the pre-fab sauce though, as I didn’t really feel like getting into that one. I bought some egg rolls as well, since they seem a little bit over my head to prepare in short period of time, and the fact I don’t even eat the contents of an egg roll would be pretty self defeating. For some reason I love getting egg rolls, removing all the contents, then just eating the roll. I find I like the fact it’s crispy on the outside and soft on the inside. And to finish off the meal I’m going to make Chicken Fried Rice. Should be pretty bad ass.

I have no idea what to expect this Christmas. I didn’t really ask for anything and vaguely outlined a couple things I needed without getting into specifics. So safe to say I’ll be surprised come Christmas morning. Recently I had been working on a Christmas day surprise for Corina’s family along with her Dad. We were building a backyard skating rink with the intent on being able to use it on Christmas day. Unfortunately it isn’t going to happen. We had a crapload of rain hit yesterday and it messed up the rink pretty bad. The measure with which we tried to protect the rink with turned out to be its undoing. We had put a big tarp over a large chunk of the surface and hoped that would preserve the ice. As it turned out the tarp just made a bigger mess then if we left it uncovered. So it’s back to the drawing board. The weather today looks to be cold enough to get some ice layers down today, so who knows, we might luck out with a little hard work on it today.
